This versatile salad is my go-to side dish, perfect for pairing with chicken, steak, or any other main. It’s also a great dish on its own or as a lunch.

I love how fresh it is and the Sumac and Parsley give this salad a taste of Summer.

The option to customise it to your own liking is what makes this such a versatile salad. Feel free to swap the Feta for Mozzarella or any other cheeses, or add any other of your favourite veggies if you use this salad as a base.

• Wash all of the ingredients and dry off using kitchen towel to soak up any excess moisture as this can make the salad soggy and limp.

•Chop all of the ingredients up into a small dice and add to any large mixing bowl you have.

Aims’ Tip: The bigger the bowl the better so you can get a good toss on the salad when applying the dressing and spices later on.

•Start making your dressing just before you serve the salad because otherwise if added to the salad too early it can make the salad soggy and it will lose its crunch.

•To make the dressing add the olive oil and balsamic into a small bowl and whisk together with a fork until it emulsifies. 

•Aims’ Tip 2 : Before adding the honey rub some olive oil over the teaspoon so the honey does not stick when adding into the dressing.

•Mix in the honey until fully combined. You can add the salt and pepper at this stage or over the finished salad.

•Pour the dressing over the salad. Sprinkle the sumac and parsley over the top and toss.

•Add the crumbled feta to the top before serving (optional)
