Super Seed Granola: my go-to recipe


The most versatile recipe for breakfast Granola.

Shop-bought granolas are always a bit of a letdown; they are usually full of unnecessary sugars and not as good as homemade.

Granola is the perfect breakfast or snack to make at home, as you can personalise it to your own taste. It’s also a good pantry raid recipe as you simply add your favourite nuts and seeds, adjust the sweetness to your taste, and bake them until it smells incredible. Once you realise how easy it is to customise, you’ll never go back to the boxed stuff.

Here is my go-to recipe:

Ingredients

  • 3 packs of Porridge Oats
  • 3 tbsp Golden Linseeds
  • 3 tbsp Flaked Blanched Almonds
  • 4 tbsp Pecans
  • 2 tbsp Chia Seeds
  • 3 tbsp Desicated Coconut
  • 2 tbsp Extra-Virgin Olive Oil (or coconut oil if you have it!)
  • 3/4 tbsp honey (or maple syrup)
  • 2 tsp Vanilla Extract

Directions

  • Pre-heat the oven to gas mark 4 (180 oC) and line a baking tray with parchment paper.
  • In a bowl, add the oats, linseeds, chia seeds, coconut and blanched almonds.
  • Chop your pecans into small pieces and add to the bowl with the oats.
  • Mix to combine all the dry ingredients.
  • Add in the olive oil first (as then the honey will not stick to the spoon!)
  • Add the honey or maple and the vanilla extract and mix to combine (Adjust the sweetness to your own taste!)
  • Spread the granola across the baking tray and bake for 20 minutes.
  • Once out of the oven, leave it to cool before touching or making it into clusters.

Once cooled you can also mix with dark chocolate chips, dried fruits and coconut flakes or however you wish to your taste!

Serve with Greek Yoghurt and Berry compote 🙂
